Islay Whisky: An Overview of the Island's Legendary Distilleries
Which distilleries produce the world-famous Islay Whisky and what separates them? Islay is home to Scotland's peatiest and most characterful malts. The island is currently home to 11 active distilleries. We introduce you to the most important Islay Whisky Distilleries and their special features.
Lagavulin
Lagavulin ranks among the most heavily peated single malt whiskies available. Islay. The phenol content in the malt is around 35–40 ppm. The malt comes from the Port Ellen distillery. A special feature is the double mashing and the pear-shaped stills, which ensure a heavy, oily style. With dominant peat smoke, seaweed and spicy notes, this whisky is Islay Whisky A true classic (founded 1816).
Caol Ila
Caol Ila is the largest of the Islay distilleries. With a capacity of up to 6.5 million litres per year, it supplies the heart of many blends, but also impresses as a single malt. This Islay Whisky is characterised by drier, citrus-led notes. The smoke is present, but often feels more elegant and cooler than that of its southern neighbours on the island.
Bowmore
In the island's capital lies Bowmore, the oldest licensed distillery on Islay (Licensed since 1779). A special feature: Bowmore still malts some of the barley itself on its own malting floors. Maturation in the legendary „No. 1 Vaults“ warehouse, which lies below sea level, and the increased use of sherry casks, result in a complex whisky with a perfect balance of smoke and dark fruit sweetness.
Kilchoman
Kilchoman was for a long time Scotland’s westernmost distillery and is a genuine „farm distillery“. It owns around 110 hectares of farmland on which it grows its own barley – enough for approximately 30 % of its production. This Islay Whisky is one of the few where the entire process from field to bottle takes place on-site. The fermentation lasts an exceptional 90 hours, which, combined with the small pot stills, creates a fruity yet smoky aroma. Kilchoman has been producing since 2005 under the management of the Wills family.
Ardbeg
Ardbeg enjoys absolute cult status among connoisseurs. With a phenol content of approx. 56 ppm, this Islay Whisky among the most intense on the island. A special feature is the Purifier on the Spirit Still, which lends the heavy smoke a surprising fruity sweetness and complexity. Despite being mothballed multiple times in the past, Ardbeg is today one of the most successful Islay Whisky Distilleries worldwide.
Bruichladdich
Bruichladdich is perhaps the most experimental distillery on Islay. She completely forgoes peat for her standard whisky, but produces with Port Charlotte and the extremely smoky Octomore …and the other end of the spectrum too. Bruichladdich places a strong emphasis on terroir and uses 100 % Islay barley in some of its whiskies. In addition, the well-known Islay dry gin „The Botanist“ is produced here in a special Lomond still.
Laphroaig
Laphroaig (founded 1815) is world-renowned for its medicinal profile: iodine, sea salt and burning peat are its hallmarks. This Islay Whisky polarising like no other. Some of the malt is still traditionally malted on its own floor maltings. Laphroaig is now part of Beam-Suntory and produces approximately 3.3 million litres of new make annually (capacity has been slightly increased).
Ardnahoe
Ardnahoe is the island's ninth distillery and began production in 2018 (opening in 2019). It is located in the northeast with spectacular views of the Paps of Jura. As a modern distillery, it nevertheless relies on traditional techniques: it is the only distillery on Islay so-called „worm tubs“ (worm condensers), which lend the whisky more texture and body. The first own 5-year-old whisky was only just released (2024) – a milestone for this new generation of Islay Whisky.
Bunnahabhain
Often forgotten, but essential: Bunnahabhain in the north traditionally produces a rather unpeated, maritime style, which captivates with its maturation in sherry casks. It forms a gentle counterpoint to the smoke monsters in the south of the island.
